August 4th

Back in France... Smells like Paris! Hahahaha, didn't really miss that, but im kinda used to it now...

Called Benoit and Daniel today to say hello, and let them know I'm bck in town for a week. Nice to hear some familiar voices. Daniel was bout to head to work, Benoit was away on vacation with his wife and daughter. They both immediately remembered me and were excited to hear about my trip. Daniel said, "whatever you like!" so it was nice to hear they don't mind me coming back to help out for a few days.

Headin to see the boys at Vin Choi Moi! Walked in and said hello to everyone, Luc and Gary were out front having a smoke. They were surprised to see me, but interested to hear about my Barcelona experience. Soon as I walked in the kitchen, they were handing me food to taste!!!! New house cured pork, new cheeses, and some killer risotto. They had an order sitting in the window they didn't need, so I had a pretty awesome free dinner. Not gonna lie, couldn't have come at a better time! I was starving, and I'm starting to get low on funds:->. Not like i dont have any $$$, but would like to TRY to at least come close to my budget. Doing pretty good, but next time, I will plan for the exchange rate. I planned a certain amount, basically gonna spend that in Euros not dollars... Hahahaha, all good, one of if not the best trip of my life!

We talked about the different restaurants I worked at, and showed them some pics of the cool food I was seeing and preparing at the fine dinning places in Spain. They were def familiar with the techniques I'd seen, but also about the team and space you need to execute that. I love that I got to see all that cool stuff, but we agreed that there's a time and a place for that. Not really possible at their spot back here in Paris. And I told them, as much staff as we have, not sure all that would work back home. So many ideas, but you have to cater to your audience... Can't wait to experiment and try some new stuff back home though!

Took the metro to the bar I went to couple weeks ago where I met Cypress. Cool guy I met at another bar that hooked me up last time I was in town. He was workin, bought me my first round, had a great time!!!! First round here means a beer, a shot, and one more shot, lol! Talked about Spain, pretty cool he not only remembered me, but was cool enough to buy me some drinks and talk for a bit. Love how things are just working out. Free dinner, free drinks, like I said... Could not have come at a better time:->

Heading to bed early tonight, 1:30 am! Ha! Gonna get some sleep, chill for the day tomorrow... Got til Tuesday so maybe go see the Louvre or back to Notre Dame to light a candle for Mille and Terry. Can't believe my trip is almost over, but a wonderful first day back in Paris.

My risotto with dried tomato, caper, and olive powder. So good! They gave me some of the house cured pork and some Compte cheese on the side, killer! And a little coca cola, with ice... Doesn't happen often here:-).

Daniel's pork... Cured for 15 days in salt, pepper melange, and sugar. Amazing!! Sliced thin, just as good as the ham in Spain!
