July 5th

Another day on the job. Had a good morning, very busy lunch! It's amazing how busy 50 covers can feel like when you are in a small kitchen with two cooks.

New menu today... They change every two weeks! Kinda like us though, few things change, and the staples stay the same. We did roasted pork, with sautéed mushrooms and jus. The chicken with BBQ, some kind of white fish with roasted veggies and a killer yogurt sauce. Salmon tartar with avavado, served with haricot verts in sesame oil. And my lemon tarts i made the shells for yesterday. Jilly Bates would be proud!!! Def learning some cool techniques stuff They clean up the poached eggs with kitchen shears (scissors), never thought of that. They peel there mushrooms. There are soo many things. Very glad I'm working for a place like this and actually learning, rather than a huge restaurant, where I would be peeling potatoes all day. I even have to work half the service tonight, because Gary(2nd chef) has an appointment and won't be in til late. Very pleased with experience so far!


Its cool how this chefs menu works. It's French food, but with a little bit of Italian, Indian, and Asian ingredients thrown in. I like... And they really are a family. The dishwasher was late last night, and the first thing the chef did when he arrived, was cook him dinner. And this was in the middle of service!!! That unfortunately would never happen back home. Guess there are a few nice people in this country. They both told me they like speaking English with me, it is good for them because they never do it. The restaurant is not a huge tourist spot, mainly a busy lunch crowd of local business people. Wish I would've come here first.
